Sourgough bread – fresh and tasty
Our breads are made from different mixtures of flours and leaven for at least 48 hours. Maya bread is a dish that can be found in the Samsara menu.
What is maya?
Maya is a natural ferment obtained only from water and flour and with which we can leaven the dough. This mixture, under the action of time and temperature, produces lactic acid and several types of wild yeast. All this makes its mark on the taste of bread made with mayonnaise, giving it its characteristic taste and aroma.
Yeast or maya?
At the same time, maya is responsible for the life of the fermented product, but also for its digestibility. Thus, we get the benefit of a faster assimilation of nutrients. A bread made with maya will stay fresh and can be eaten for a longer time than a bread made with yeast. It will be much more easily digested by the stomach and the nutrients will be more accessible and easily assimilated by the body.
What do we get from sourdough bread?
For starters, we need wholemeal rye flour as natural as possible. The advantage of rye flour is given by the higher amount of nutrients in its composition, compared to wheat flour. The common supermarket flour is ground in a roller mill that spins very fast, which makes it heat up very well and kills even the microorganisms we need and which exist naturally on the rye grain. We recommend using a flour milled with stones. In addition, it is important to use wholemeal flour, because the nutrients in the bran help a lot to grow crops of beneficial bacteria.
For the preparation of bread, we always use organic flour and ground on a stone mill.
